Day 7 of 31 Halloween cocktails that won’t rot your teeth (but might rot your brain)

The original Sleepy Hollow cocktail dates back to the 1930s and features bright apricot and zesty mint. It tastes like fall smells—overripe stone fruit on the ground, fresh pine wafting on a crisp breeze—I wonder where that foggy tunnel of trees leads?

I used Empress Indigo Gin to give the drink a purple, witchy hue; I also like how the citrus notes play with the apricot.

Sleepy Hollow

2 oz gin
1/2 oz fresh lemon juice
1/4 oz apricot liqueur
1/4 oz simple syrup
1 sprig of fresh mint, torn

Combine all ingredients in cocktail shaker (yes, the mint too) with ice and shake to combine. Double-strain into an old fashion glass over crushed ice and garnish with a lemon wheel.
