Day 1 of 31 Halloween cocktails that won’t rot your teeth (but might rot your brain)

Like a lot of home bartenders seeking great cocktails recipes, I found this one in Imbibe Magazine. Far as I can tell, it has nothing to do with Beetlejuice the character as its taste and texture is completely sweet and bubbly, unlike Beetlejuice, but it was apparently a fan-favorite during a 2017 PUB Dread Halloween pop-up in Washington, D.C., so who am I to argue it’s name-to-flavor compatibility.

As I said before, it’s sweet and bubbly, dominated by strawberry with a hint of absinthe. It’s basically a tinkered-with Americano; it’s easy to make and your friends will love it at your next Halloween party. You can also save any leftover strawberry syrup to drizzle over pancakes or buttermilk biscuits!

1 oz. Aperol
1/4 oz. Campari
1/2 oz. Sweet vermouth
1 oz. Strawberry syrup
1 barspoon Pernod absinthe
3 oz. Sparkling water

Combine all the ingredients in a highball over ice, stir, then garnish with a Twizzer or Red Vine, whichever makes a better straw for you.

Strawberry syrup
1 cup granulated sugar
1 cup strawberries (tops removed and cut in half)
1 cup water

Heat all the ingredients in saucepan over medium heat, stirring until the sugar is dissolved. Allow to cool, then fine-strain into a bottle and refrigerate.
